Seriously, nothing comes close to the flavor, juiciness, and beautifully crisp golden skin that a dry brine delivers. Our family is a bit over-the-top obsessed with pears this time of year. ♡

We pick up a big bag a few times a month when we’re at Costco — which means we go through a lot of pears — and lately this salad has become one of our favorite ways to enjoy them. I threw it together a few weeks ago when we happened to also have some pomegranate arils in the fridge, and my husband and I absolutely couldn’t stop going back for more. It’s just so good.

The sweet, juicy pears pair perfectly with the tangy goat cheese and tart pomegranate, while the toasted walnuts add just the right amount of crunch. Pot Roast, But Make It Extra-Flavorful!

There’s something about a good pot roast that just feels timeless. ♡

I love that generations before us were making the same sort of meal on slow Sunday afternoons — beef searing on the stove, root veggies simmering away, the house smelling more delicious by the minute. It’s definitely one of those nostalgic meat-and-potatoes dinners that will never go out of style!

That said, I’m definitely partial to pot roasts that are richly seasoned with layers of rich, savory flavors. So my version adds in a cup of red wine, lots of garlic, a spoonful of tomato paste, and perfectly-balanced mix of thyme, bay, and Worcestershire. The beef turns meltingly tender, the veggies soak up all that savory goodness, the sauce is absolutely irresistible.

I wrote this recipe with traditional Dutch oven instructions, but admit that I probably most often make this one in the Crock-Pot or Instant Pot nowadays. So all options are included below — choose your own adventure and enjoy!

They’ve become an absolute staple in our weeknight dinner routine lately — easy to make in 15 minutes total, perfectly tender in the middle, and irresistibly crisp and golden around the edges every time. I always used to roast green beans in the oven, but the air fryer version is faster and easier. And honestly, just as delicious every time.

I highly recommend using French green beans (haricots verts) here, since they cook quickly and stay extra delicate, but regular green beans work just as well if that’s what you have on hand. We most often make ours simply with salt, pepper, and a hint of garlic powder, but you can absolutely play around with other spices to make them your own. However you choose to season them, air frying is the way to go!

Ok, this really is just the loveliest salad! ♡

I made it the other day to serve for dinner with cacio e pepe and everyone around the table absolutely adored it. So I’ve now added it to our Thanksgiving lineup and will probably bring it along to a few Christmas parties too since it’s so festive and seasonal and easy breezy — everything I love in a green salad this time of year!

I pulled out my mandoline (along with this safety glove, which you should definitely own too) so that I could shave the apple, fennel and Parmesan paper-thin, which gives this salad the loveliest airy, delicate texture. Then I added in a handful of candied pecans for crunch and fresh basil for a burst of aromatics, and tossed everything with a lemony shallot vinaigrette. It ends up having the most refreshing balance of sweet and savory flavors. And as a bonus, the ingredients all hold up well in the fridge, in case you’d like to prep most of the salad beforehand (see tips below).

Feel free to add in a protein (chicken, bacon, shrimp, etc) or swap in another kind of fruit or cheese or nuts that you might love best here. The recipe itself is easy to customize with whatever you may have on hand. I just recommend adding it to your list soon because it’s perfect for this time of year! Enjoy!
