When you simmer honey…it basically destroys it for shelf life. Infused honey lasts forever.

I say heat the honey and enjoy it. You can easily get antioxidants and more from the rest of your diet, including the raw honey I’m sure you enjoy on other things that you wouldn’t use hot honey for.

I agree (I’m a beekeeper). The reason is that the bees cap the honey in the hive when it is less than 18% moisture and so it ends up being hydroscopic (attracts water). Honey over this moisture content has the ability to ferment and should be used in a timely manner. Vinegar adds water but is also acidic. Honey typically has a pH of under 4 and is also acidic but it is offset by the sweetness. I use dried or cayenne pepper to avoid this moisture content issue to whatever heat I seek…
