Due to the covid situation substitutions had to be made. I didn’t have enough cucumber, so I put extra tomatoes in. There was no mint available and it is too early for it to be in the garden, so I used parley instead. Nevertheless, it was still wonderful. Thanks for a great recipe!

You nailed it. The dressing is great. I use a mandolin for slicing the cucumber, red onion and radish. A piece of feta on the side is perfection. I enjoy the simplicity of your recipes.
