Kir Royale is often the “House Cocktail” at our dinner parties. My favorite way of serving a Kir Royale is to fill the champagne flute with brut champagne first. Then using a teaspoon (or tablespoon) of creme de cassis, touch the spoon to the inside of the flute and slowly pour the creme de cassis into the glass of champagne along the inside of the flute. The creme de cassis is heavier than the champagne, so it pools at the bottom of the flute. The bubbles will gradually mix the creme de cassis with the champagne. I usually garnish the Kir Royale with a lemon twist. Beautiful and delicious.
