This is so good. To use up some stuff I tweaked the recipe just a bit, also doubled it for a 9×13 cake pan w/ a lid. Instead of the brown sugar, used a pint of home made/ canned apple butter that was getting on. So, reduced oil to 1/2 c., and used only a T. of pumpkin pie spice. Additionally threw in 2 greek yogurts from the fridge, vanilla and berry. The texture is amazing and the apple flavor is very pronounced. I will be using up all the remaining pints of apple butter w/ this cake!

I always exactly follow the recipe the first time through and make notes to adjust next time if needed. This was so good as is! Finely grating a cinnamon stick was a nice touch. The only adjustment my husband requested was more icing, so I might double the icing next time just to make it a little thicker on the cake. Thanks, Ali and A Couple Cooks! Are you sure that 3 tablespoons of pumpkin pie spice is correct and not a typo, particularly given the small amounts of individual spices? I stopped at 2 T and tasted the batter, and very glad I did. I think it will turn out fine but 3 T would be way too much.
