Wow I love this recipe! They are perfect, chewy and delicious and it was very simple to make!
I cut the recipe in half, and using a 1oz cookie scoop I came out with 31 cookies.
I froze some of the dough to save for later so I am hoping baking from frozen goes just as well if I add a couple extra minutes. Thank you!

Really happy with how these turned out! Was looking for a chewy delicious ginger molasses cookie and this is the best I have found. Amazing texture, fantastic balanced taste. Would highly recommend these!

These are the rare cookies that taste better baked than the dough does. I was afraid to bake them because the dough is so good, but it doesn’t come close to how good the baked cookies are. I mixed up a half recipe because the full recipe using over four cups of flour is what we used to call a “double batch”. I didn’t want that much dough in case I didn’t like the cookies. The fall spice mix is in the perfect ratio, especially in conjunction with the perfect amount of molasses. I did add in 1/8 tsp each of nutmeg and allspice (for the half batch), and I’m glad that I did. Sheer perfection.

These cookies are incredible! I huge his with the family. However, this recipe makes a mega batch…I halved this recipe and came out with almost 50 cookies!

Thank you for this recipe! I substituted 50% each of oat and buckwheat flours to make them GF and they look exactly like yours – delish! Will up the ginger a pinch next time, or try the candied ginger – closest the Starbucks I have found :)

it made way less than 40 cookies but they were delicous
