I’m telling you — this simple summertime dessert is an absolute winner every single time. ♡

Seriously, we’ve made these grilled peaches approximately a thousand times over the past few summers, and this recipe always gets such rave reviews from family and friends. It’s easy to make outdoors if you already have the grill fired up, or can also be made easily indoors on a grill pan. It comes together easily in just 20 minutes, or less than 10 if you’ve already prepped the homemade bourbon caramel sauce beforehand. It’s easy to scale up for a large crowd or make a small batch for just a serving or two. And it’s endlessly customizable with any extra toppings that you might want to add on top. (Here’s lookin’ at you, nuts, crumbled cookies, herbs or chocolate!)

It’s the perfect recipe to have in your back pocket this time of year when you’re needing a quick and easy dessert. And I highly recommend making a double batch of that bourbon caramel sauce while you’re at it, because trust me, you’re going to want to drizzle that magical sauce on just about everything.

Grilled Peaches with Bourbon Caramel Sauce Ingredients

Here are a few quick notes about the ingredients you will need to make this grilled peaches recipe:

  • Bourbon caramel sauceMy favorite homemade bourbon sauce is easy to make in just 10 minutes with granulated sugar, heavy cream, butter, vanilla extract, bourbon (or your choice of whiskey) and fine sea salt.
  • Fresh peaches: Look for fresh peaches that are ripe and soft to the touch, yet still fairly firm so that they can easily slice and hold their shape while grilling.
  • Vanilla ice cream: I love serving this dessert with ice cream (we’re partial to a good vanilla), but it could also be delicious served with Greek yogurt, whipped cream, or mascarpone.

How To Grill Peaches

Feel free to grill your peaches on an outdoor grill or an indoor grill pan — both options work great!

  1. Heat the grill. Make sure the grates are nice and clean. Heat the grill to medium heat.
  2. Prep the peaches. Halve and pit the peaches. Brush the cut sides with a bit of oil to help prevent sticking and add a hint of flavor.
  3. Grill the peaches. Place the peaches cut-side-down on the grill. Cook for about 3-4 minutes, or until grill marks have formed and the peaches have slightly softened. Flip and cook for 2 more minutes, then place the peaches in your serving bowls cut-side-up.
  4. Serve. Top with a scoop of vanilla ice cream, drizzle with the bourbon caramel sauce, serve immediately and enjoy!

Possible Variations:

Feel free to get creative with this recipe and make it your own! For example, you could also…

  • Add nuts. Sprinkle some toasted walnuts, pecans, or almonds on top.
  • Add cookies. Sprinkle some crumbled gingersnaps or graham crackers on top.
  • Add fresh herbs. Sprinkle some julienned or finely chopped fresh herbs (such as mint or basil) on top.
  • Use a different fruit. Grill nectarines, pears, apples, pineapple or bananas as a base instead of (or in addition to) peaches.
  • Skip the grilling. If you’re short on time, uncooked ripe peaches would still be delicious here!

Description

Ingredients

  • fresh peaches, halved and pitted
  • avocado oil (or any neutral-flavored oil)
  • vanilla ice cream
  • bourbon caramel sauce


Instructions

  1. Make the bourbon caramel sauce. Prepare the bourbon caramel sauce according to recipe instructions.
  2. Grill the peaches. Heat a grill or grill pan to medium-high heat. Brush the cut sides of the peaches with oil. Place the peaches cut-side-down on the grill and cook for 3-4 minutes, or until they are lightly charred. Flip the peaches and cook on the other side for about 2 minutes.
  3. Serve. Transfer peaches to serving bowls, cut-side-up.  Top with ice cream, drizzle with caramel sauce, and dig in while the ice cream is still cold!

Notes

Grill pan method: If you prefer to cook this recipe indoors, you can grill the peaches on the stovetop using a grill pan.

Mango Lime Sorbet

Summer’s just around the corner, so I say we blend up a quick batch of this mango lime sorbet! ♡

It’s one of my favorite back-pocket dessert recipes this time of year because it’s easy to whip up in just 5 minutes from start to finish. And all you need to make it are 4 simple ingredients — frozen fruit (mango, in this case), fresh lime (we’ll use both the juice and zest), coconut milk (or your preferred type of milk or water), and fresh ginger (or ground ginger, in a pinch). Everything purées together magically in a high-speed food processor or blender to create a perfectly silky smooth sorbet. And while you’re welcome to pop a batch in the freezer to save for later, the brilliance of these food processor or blender sorbets is that they are ready to serve immediately if you’d like. Dessert craving = solved!

As you can see, this mango sorbet recipe is already naturally gluten-free and vegan as-is. But I’ve also included some fun ideas for how to customize it below with different fruits and add-ins, so please feel free to have fun with the recipe and make it your own!

I actually made and photographed this ice cream pie at the beginning of the summer, but kept forgetting to post it! Oops!!! So alas, as we enjoy our final days of this beautiful season, I offer you another summer favorite — ice cream pie! :)

The fabulousness of this recipe is that it requires no ice cream maker (unless you really want to earn an extra gold star and go “homemade”), only takes 10 minutes to create, and is a guaranteed crowd-pleaser. I’m not kidding. Every time I make one of these (which is often when I run out of time to cook something else!), people go nuts over them. And they disappear in a snap. :)

So if you love ice cream, or would love a fun dessert project for the kids, or are looking for an emergency quick dessert recipe, or….are simply craving an ice cream pie….you should totally give this a try! I’m so not kidding. This recipe will have you swooning. :)

I made it for the first time a few weeks ago, after stumbling upon it in a recent issue of ReadyMade. And once I realized I actually had ripe bananas and the rest of the ingredients on hand, I actually decided to whip up a quick batch for a party that very night. Needless to say…after one bite, it was all I could do to force myself to let it leave my kitchen. But everyone at the party went nuts for it! We all agreed it tasted just like the most heavenly banana bread…except with the cool, creamy, richness of summer ice cream. Hea-ven-ly.

You must, must, must give this one a try!

It seems like everywhere you can go for breakfast nowadays — from Starbucks, to McD’s, to my favorite local breakfast spot — breakfast parfaits are tres chic. And rightfully so! That burst of fresh fruit, crunchy granola, and healthy yogurt are a perfect way to begin the day! :)

They also happen to be a completely easy, affordable and super-speedy breakfast to enjoy at home as well! I’ve been making them lately with the delicious fresh blackberries and strawberries that have been in abundance at the market. Most often I love using granola in these, but this week I’ve actually been digging Kashi’s “Go Lean Crunch” — hey, whatever works!

So while I know this one is hardly a “recipe” to post, hoped it might be an inspiration to create and enjoy your own unique parfait sometime soon!

For my birthday this year, my wonderful next-door neighbor gave me a gift certificate to Prydes – this a-ma-zing local kitchen accessories store that I love-love-love! And after wandering around in heaven for about half an hour, I actually ended up settling on buying my first set of popsicle molds – yay!

I’ve made popsicles many a time before in Dixie cups (which work really well, and are adorable!), but there’s something so fun about pouring a pureed fruit mix into this classic shape. Brings back so many great memories of summers in the sun!

So for my initial batch, I decided to turn my strawberry limeade craving into something a bit healthier — these (fresh!) strawberry lime yogurt popsicles. The name basically describes the ingredients — just some fresh (or you could use frozen) strawberries, fresh lime juice, a little sweetener, and some of your favorite yogurt.

Needless to say, they were delicious! And I loved being able to feel good about controlling the amount of sugar, and using trusted fresh ingredients in these. AND, the batch cost much less than buying them at the store – perfect!

So pull out your popsicle molds, or Dixie cups, and make a fresh, delicious batch of your own!
